These high fibre almond butter cookies are tasty and very high fibre (yes, it’s worth saying high fibre twice)!
Ingredients (makes 45 cookies)
- 1/2 cup unsalted butter (at room temperature)
- 1/2 cup brown sugar
- 3/4 cup pure almond butter
- 1 egg
- 1 teaspoon vanilla extract
- 1 1/4 cups oat bran
- 1 cup flour
- 1/4 teaspoon salt
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 cup shelled unsalted sunflower seeds (optional)
Preheat oven to 350 degrees Fahrenheit.
Cream butter and sugar together in a large bowl. Beat in almond butter, egg and vanilla.
Combine dry ingredients in a small bowl. Add dry ingredients to the butter mixture. Stir until the dough is soft and smooth.
Roll cookies into small balls with your hands and place on parchment-lined cookie sheet. Use a fork to pat down each cookie to about the same thickness.
Bake at 350 degrees F for 17 minutes until edges just begin to turn golden brown. Transfer to rack to cool.
