Almond Butter Oat Bran Cookies


These high fibre almond butter cookies are tasty and very high fibre (yes, it’s worth saying high fibre twice)!

Ingredients (makes 45 cookies)

  • 1/2 cup unsalted butter (at room temperature)
  • 1/2 cup brown sugar
  • 3/4 cup pure almond butter
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups oat bran
  • 1 cup flour
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 cup shelled unsalted sunflower seeds (optional)

Instructions for Almond Butter Cookies

Preheat oven to 350 degrees Fahrenheit.

Cream butter and sugar together in a large bowl. Beat in almond butter, egg and vanilla.

Combine dry ingredients in a small bowl. Add dry ingredients to the butter mixture. Stir until the dough is soft and smooth.

Roll cookies into small balls with your hands and place on parchment-lined cookie sheet. Use a fork to pat down each cookie to about the same thickness.

Bake at 350 degrees F for 16 minutes until edges just begin to turn golden brown. Transfer to rack to cool.
